Some glow in the dark, others are poisonous, but what you might not know is that mushrooms are also a healthy food source packed with vitamins and minerals, and leave a small carbon footprint when grown and harvested. Students from U-M’s Sustainable Living Experience have been working on a sustainability project growing mushrooms in an effort to contribute to a more carbon-neutral campus.
